Overnight oats have taken the breakfast world by storm the
last couple of years and for good reason. This versatile and convenient
breakfast option not only saves you precious morning minutes but also delivers
a hearty, nutrient-packed start to your day. The best part? You can customize
overnight oats to suit your taste preferences and dietary needs. And now, with
a nod to traditional banana pudding, you can savor those nostalgic flavors
guilt-free.
The beauty of Banana Pudding Overnight Oats is you get the
wholesomeness of oats with the flavor of banana pudding. It’s a balanced blend
of sweetness and comfort without excess sugar and unhealthy additives. It's a
breakfast treat that will make you feel like you're indulging, even though
you're nourishing your body with whole grains.
Most of the time overnight oats are prepared in individual grab-and-go
containers. In this recipe, you will make the batch of oats in a big container
and then layer everything in a smaller container after the oats have solidified
into a pudding consistency. It’s an extra step, but it only takes a few minutes. The graham cracker crumbs will retain their crunch and texture if you add them right before eating. The layering ensures you have banana goodness in every bite. Traditional banana pudding includes Nilla wafers. This recipe uses graham
crackers instead. I used graham crackers because they don’t have milk or eggs and have less sugar than Nilla wafers.
½ cup of old-fashioned rolled oats
1 Tbsp of chia seeds
½ tsp of vanilla
1 Tbsp of agave syrup
1 cup of unsweetened soymilk
Pinch of salt
1-2 oz of chopped walnuts
1 sheet of graham crackers (4 cookies)
1 banana sliced.
Directions:
1. Mix the oats, chia seeds, agave syrup, vanilla,
salt, and soy milk in a bowl. Cover and refrigerate for at least 8 hours. It’s
better if you can let it sit longer. The longer it sits, the consistency becomes thick and pudding-like.
2. The next day put a graham cracker sheet in a zip lock bag and seal it shut. Crush the graham crackers with a rolling pen until they become crumbs. Slice the banana.
3. Put a few tablespoons of the oat mixture in a small mason jar until it covers the bottom. Sprinkle with the chopped walnuts, banana slices, and graham cracker crumbs. Continue layering until you run out of ingredients. You should have 2 to 3 layers when you are done.
4. Eat and enjoy.
